15-Minute Indian Curry with Chicken and Peas



~~Ingredients~~

     Veggies 
  • 1 small yellow onion
  • 2 cloves garlic
  • 1 cup frozen peas, thawed
     Can Goods
  • 2 tablespoons tomato paste
  • 1 1/2 cups chicken stock
     Meat
  • 1 pound chicken tenders 
     Dairy
  • 1/2 cup full-fat plain Greek yogurt 
     Seasoning
  • 2 tablespoons canola oil
  • Kosher salt 
  • 1 1/2 teaspoons curry powder
  • 1 1/2 teaspoons garam masala 
    Optional items
  • 4 pieces naan bread, warmed (optional) 

~~Prep~~

  • Finely chop the onion, about 1 heaping cup
  • Finely grate the garlic into tomato paste 
  • Cut the chicken tenders in half (crosswise) 
    • add salt

~~Cooking~~

  • Add canola oil to a large Skillet (mid-high hear) and swirl to coat
  • Add onions + pinch of salt --> light brown ( ~ 3mins)
  • Add tomato paste 
  • Add Curry powder
  • Add Garam Masla
  • Add 1/4 cup of water
  • STIR CONSTANTLY  (~1 min)
  • Stir in Chicken stock
  • Bring to a strong simmer
  • Add Chicken
  • STIR Occasionally --> chicken is cooked (~5 mins)
  • Reduce heat to a low simmer
  • Add peas
  • Stir in 1/4 cup of Yogurt
  • Cook until peas are just warmed through (~1 min)
  • Add additional salt and season to taste 
  • top each dish with yogurt and serve
